My recipe for the day

Another thing I want to share today is what I made for lunch this afternoon.  I know many of you don't really want to know...but this is mostly for my wonderful Mother-In-Law because I know she would LOVE this!  The fast that I'm doing has really forced me to try things that I don't think I would've tried otherwise, (okay, I KNOW I wouldn't have tried ),and most of them I'm happily surprised to really enjoy! 

Today I made Quinoa and Veggies (pronounced keen-wah) and it's another dish that I'll make again and again!  I found this recipe online and tweaked it just a little.

1/2 cup quinoa
1 cup water
1/2 TB EVOO
1/2 cup diced onions
1 clove garlic, minced
1/2 cup yellow bell peppers
1/2 cup diced tomatoes
2 Tbs. pine nuts
1 tsp. dried oregano
1/4 tsp. salt
pepper

Rinse quinoa under cold running water in a fine-mesh strainer until the juices run clear.  Transfer quinoa to a small saucepan, and add water.  Heat to boiling. Reduce heat to low and cover.  Let simmer for 20 min. or until all water is absorbed.

While that's cooking, heat the EVOO in a skillet over medium heat.  Cook the onions until soft then add garlic and cook for about 1 minute.  Add the peppers and tomatoes, squeezing the tomatoes with your hands to release their juices into the skillet.  Cook over low heat for about 5-8 min.

Add the quinoa to the skillet then stir in the pine nuts, oregano, salt and pepper.  Stir and cook until heated thoroughly. 
Very good and you can definitely change it up by adding different vegetables!  Try it...you'll like it!
